Cadbury Creme Egg Cupcakes

Oh, Cupcakes!!

Cupcakes are my thing!! I mean – I love eating them and nonetheless make them!! They are fun, pretty and you can easily let your creative mind flow and create your own little special sweet treat. Yuum..

Anyways, I few weeks ago I did what I usually do when looking for cupcake inspiration! I simply typed into Google ‘Cupcakes’! Creative search term, I know!.. haha.. As I was scrolling down through pages and pages of images, while selflessly chewing away on the addictive Cadbury Mini Eggs and drinking coffee, I changed my search term to ‘Easter Cupcakes’! Honestly, some of the images there are mind blowing and people’s creativity soooo inspires me! And lot of those images were decorated with Cadbury Mini Eggs :pΒ  That is what I decided to make that night. Find it here. πŸ™‚

But after clicking on one image which lead me to a website, which then led me to another website and so on, my search finally resulted in that I found a mouthwatering recipe on Cadbury Creme Eggs!
Cupcakes + Cadbury Creme Eggs = Oh my!! YUUUUM!! πŸ™‚

So here is my version of the Cadbury Creme Egg Recipe! This recipe is so delicious and easy to make!

Important note: Just remember to freeze your Creme Eggs before baking, otherwise it will be a complete mess!

IMG_5232I advise you to make them the same day as when you are planning on serving them. After the Creme Egg has been in the oven it seems to crystallise and get quite hard – but still tastes delicious!

Cadbury Easter Egg Cupcakes

Makes 24

Ingredients

  • 350g flour
  • 300g sugar
  • 100g butter
  • 70g cocoa powder
  • 100g melted chocolate
  • 360ml milk
  • 1,5 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla powder/sugar/extract
  • 3 eggs
  • 24 Cadbury eggs (FROZEN)

Frosting

  • 200g soft butter
  • 500-800g icing sugar (depending on how thick you want the frosting)
  • 1,5 tsp. vanilla
  • ΒΌ tsp. salt
  • 2 tbsp. milk

Instructions
1. Place the eggs in the freezer until completely frozen. I froze mine for about 6 hours.
2. Preheat the oven til 175Β°C (350 F) and make cupcake forms ready.
3. Mix together butter and sugar until combined. Add eggs, one at the time, and mix until light and fluffy. Add the dry ingredients, flour, cocoa powder, baking powder, vanilla, salt and mix until completely combined. Add the melted chocolate to the batter along with the milk and beat until combined.
4. Fill the cupcake forms ΒΌ full and place an egg in the middle (thick side) down in the batter.
5. Top eggs with another 1-3 tsp. batter.
6. Bake for 18-20 mins. Remember when checking if cakes are finished to place a toothpick on the side of the cake, as the egg is in the center.

Frosting
1. Beat the soft butter until creamy and add icing sugar until you have reached the desired consistency.
2. Add the vanilla, salt and milk.
3. Top cupcakes with frosting, decorate and enjoy.

Keep in an airtight container for 5 days in the fridge!

Chicken & Chickpea Salad

Sometimes.. a simple dish is all you need! πŸ™‚
and a dish like this one is so easy to make and it’s so delicious.

How to cook chickpeas:
Before cooking dried chickpeas, the first thing you will have to do is soak them. Place chickpeas in a large bowl and cover completely with cold water. Allow to soak overnight, about 12 hours. Once chickpeas have soaked, drain and transfer to aΒ  cooking pot. Cover with water twice the amount of chickpeas and bring to a boil. Cover and allow to simmer for approximately one hour. Allow to cool before serving them in a salad like this one!

Ingredients:

  • 250 g dried chickpeas
  • 3 tomato de-seeded, diced
  • 1/2 cup cucumbers, diced
  • 1 whole capsicum
  • 1-2 carrots
  • 2/3 cup parsley, finely chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice

Simply chop all the ingredients and mix them together. I chopped mine into squares. Put into the fridge to chill and marinate in the lemon juice and olive oil mixture for about 30 minutes.

Easter Cupcakes

Easter has come early this year! πŸ™‚ yaay..

Apart from Christmas, Easter is one of my favorite holidays. It brings back childhood memories of anxiously waiting and staring at all the chocolate eggs on the shelf above the fridge. And finally on Easter morning being able to have, once a year, chocolate for breakfast. Yuum..

Unfortunately, I spend my Easter holiday so differently now as a ‘grown up’ which requires me to do adult university things such as writing assignments! 😦 But.. just that one time a year I allow myself to have chocolate for breakfast πŸ™‚

When I saw the Cadbury Mini Eggs in the shop early February, one of my absolute weaknesses, I just had to make chocolate Easter cupcakes with chocolate frosting πŸ™‚

Chocolate Cupcakes

Makes 12

Ingredients
100g flour
20g cocoa powder
140g sugar
1,5 teaspoon baking powder
pinch of salt
40g soft butter
120 ml milk
1 egg
1 teaspoon vanilla
100g melted dark chocolate

Frosting
300g icing sugar
100g soft butter
40ml milk
50g melted chocolate

Directions
1. Preheat oven on 170
2. Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes.
3. Add eggs, one at a time, beating until well combined.
4. Measure the flour, baking powder, vanilla, salt, and cocoa powder into a small sized bowl and whisk to combine.
5. Add dry ingredients, milk and the egg mixture and beat until combined.
6. Melt the chocolate and add to the batter.
7. Scoop batter into cupcake cups and bake cupcakes for about 20-22 minutes.

Banana Bread

Banana bread is one of my all time favorites and I can’t get enough of it. Seriously, I’ve almost eaten half a loaf while making this post! Oops.. Haha.. πŸ™‚

For me there is nothing better to have some banana bread with butter and a nice cup of tea. Simple and delicious – and unbelievable satisfying.

Banana Bread

2 eggs
70 g sugar
3 ripe bananas
50 g melted butter
100 ml milk
150 g flour
2 tsp baking powder
1 tsp vanilla
Β½ tsp cinnamon

Method:
Preheat oven to 175 degrees Celsius and butter a 22cm x 12cm bread loaf tin.

Whisk together eggs and sugar until light and fluffy. Melt the butter in a saucepan, once melted remove from heat and add the milk. In a small bowl mash the bananas with a fork and add to the egg mixture and stir until combined. Add the melted butter and milk along with the flour, cinnamon, vanilla and baking powder and stir until combined.

Pour the batter into the prepared tin and bake for 60 minutes in the middle of the oven, or until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and let cool before slicing.

New In – Dior 999

Dior Rouge 999

is a medium red lipstick which has this beautiful classic red colour. I saw the lipstick on Dior’s advertisement campaign with Natalie Portman and I fell in love with the shade – and I had to have it. πŸ™‚Β  What I love about this lipstick is its colour, of course, and that it is surprisingly hydrating, keeping my lips smooth and glossy. However, I do recommend using a lip liner underneath to keep the lipstick from running and last longer.

The only thing that is distinctive about this lipstick is its smell. It smells like a typical luxury lipstick which may be hard to getting used to!! I must admit – I struggled with it in the beginning, but after a few times, it doesn’t bother me anymore. πŸ™‚

Roasted Almonds

Roasted almonds in the oven

are one of my favorite foods! I LOVE them! I roast them often and are one of my favorite snacks. Perfect for UNI. πŸ™‚ I buy them raw, usually in 1kg bags, and roast them at home!! And there you have it – a delicious healthy snack (in moderation) that you easily made yourself. It is so simple yet so tasty. πŸ™‚

Almonds are a superfood and are high in antioxidants and full of beneficial fats that raise good cholesterol and lower bad cholesterol.

How to:

1. Turn oven on 150 degrees Celsius.
2. Spread the almonds on a baking tray and bake for about 15-20 minutes, until you can smell this nutty aroma from the oven.
3. Let them cool completely before you serve them.
– Trust me, they are addictive πŸ™‚
